Junmai
A sake that allows you to enjoy the umami of the rice. Well balanced, it is the perfect accompaniment to a meal. It also goes well with pickled dishes.
The Tsukechi River flows in front of the brewery. The beautiful Tsukechi Gorge is located at the upper reaches of the river.
The water used for brewing sake comes from a spring that bubbles up from the brewery-owned mountain behind the brewery. The water itself has a refreshingly sweet flavor. This clean, fine-tasting water is piped from the mountain to the brewery through a large pipe . The brewery is selective about the water it uses. It does not engage in activities like cutting and replanting trees, and instead chooses to leave the entire area in a natural state.
This Sake uses Gohyakumangoku rice cultivated by the brewery and locally produced rice, both using as few agricultural chemicals as possible. Careful attention is paid to the local rice and water used in the brewing process.
